Vegetable and Blue cheese salad

Ingredients

  • 1 large carrot, peeled and sliced thin
  • 1 beetroot, peeled and sliced thin
  • 1 butternut squash, peeled and sliced thin
  • 1 cup brussel sprout leaves
  • 1/2 cup radish, sliced thin
  • 1/4 cup chunky bleu cheese dressing

  1. Using a mandolin, slice all the vegetables paper thin.
  2. Toss the brussel sprout and bleu cheese dressing together.
  3. Arrange on your plate freely, and be creative!
