Ingredients

  • 10 cups torn iceberg lettuce or mixed salad greens
  • 1 medium cucumber, peeled and thinly sliced
  • 3 Roma (plum) tomatoes, cut into wedges
  • 8 white mushrooms, sliced
  • 5 green onions, sliced
  • 3/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 4 tsp. dried oregano
  • 1 tbsp. dried basil
  • 8 oz. crumbled feta
  • 12 pitted kalamata olives

  1. For the salad, in a large bowl combine lettuce, cucumber, tomatoes, mushrooms and green onions. Set aside.
  2. In a small bowl whisk together oil, lemon juice, oregano, basil, and salt and pepper to taste. Drizzle on salad; toss to coat. Add olives, sprinkle with cheese, and serve.
