Ingredients

  • 4 (4- to 5-oz.) tilapia fillets
  • 2 tbsp. fresh lime juice or pomegranate juice
  • 3 garlic cloves, chopped
  • 1/2 cup pomegranate seeds
  • 1 cup diced fresh mango
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced red onion
  • 1/4 cup fresh lime juice
  • 1 to 2 tsp. hot sauce, or more to taste

  1. Preheat oven to 350°F. Place fillets in a medium glass baking dish. Rub fillets with 2 tablespoons lime juice, garlic, and pepper to taste. Bake 10 to 12 minutes or until fish flakes easily with a fork.
  2. Meanwhile, for the salsa, in a medium bowl combine pomegranate seeds, mango, cilantro, onion, 1?4 cup lime juice, and hot sauce; mix well.
  3. Remove fillets from oven. Spoon salsa evenly on fillets, and serve.
