- In a food processor combine shallots, thyme, onion?herb seasoning, orange zest, sugar and pepper; process until finely chopped. Spread evenly on the top and sides of the tenderloin. Cover and refrigerate at least 8 hours.
- Preheat oven to 400°F. Coat a roasting rack with nonstick cooking spray, and place rack in a roasting pan. Place tenderloin on roasting rack.
- Place pan in oven. Roast 30 minutes or until an instant-read thermometer registers 135°F for medium-rare, or to desired doneness. Remove from oven and let stand 5 minutes before slicing.
