Ingredients

  • 2 bags boil-in-bag white rice
  • 2 lbs. ground beef
  • 1/2 cup chopped onion
  • 1 (1.25-oz.) pkg. taco seasoning
  • 1 (1-oz.) pkg. dry ranch salad dressing mix
  • 1 (16-oz.) can kidney beans, rinsed and drained
  • 1 (16-oz.) can pinto beans, rinsed and drained
  • 1 (15.5-oz.) can hominy, rinsed and drained
  • 1 (15-oz.) can tomato sauce
  • 1 (14.5-oz.) can diced tomatoes with green chiles
  • 3 beef bouillon cubes
  • 1/4 to 1/2 cup canned chopped jalapeño peppers, drained (optional)

  1. In a 4-quart Dutch oven cook and stir ground beef and onion, half at a time, over medium-high heat until beef is browned; drain fat. Return all beef to pan.
  2. Stir taco seasoning and ranch dressing mix into beef mixture. Add beans, hominy, tomato sauce, diced tomatoes, bouillon cubes and 1 3/4 cups water. Stir in jalapeños, if desired. Bring mixture to boiling; reduce heat. Simmer, uncovered, 10 to 15 minutes or until thickened to desired consistency, stirring occasionally.
  3. Meanwhile, prepare rice according to package directions. Spoon chili into bowls over rice, and serve.
