Ingredients

  • 2 lbs. lean ground beef
  • 1 medium onion, chopped
  • 1/2 tsp. each garlic powder and ground cumin
  • 1 (1.25-oz.) pkg. taco seasoning
  • 1 (15-oz.) can black beans, rinsed and drained; chilled
  • 1/2 (15.25-oz.) can fiesta-style whole-kernel corn, drained, chilled
  • 1 large iceberg lettuce, cored and chopped
  • 1 (16-oz.) pkg. tortilla chips, slightly crushed
  • 1 (16-oz.) bottle Western-style French salad dressing
  • 2 cups shredded Mexican cheese blend
  • 1 ripe avocado, seeded, peeled and sliced

  1. In a large nonstick skillet cook and stir beef, onion, garlic powder and cumin over medium-high heat until beef is browned; drain fat. Stir in taco seasoning, and season to taste with pepper. Remove from heat and let cool.
  2. Transfer beef mixture to a large bowl; stir in beans and corn. Add lettuce and chips; toss. Drizzle with dressing; toss to coat. Top with shredded cheese and avocado slices, and serve.
