Ingredients

  • 6 tbsp. butter, divided
  • 4 bacon slices, chopped
  • 1/3 cup finely chopped onion
  • 1/2 cup flour, divided
  • 1 tsp. lemon pepper
  • 1/2 tsp. salt
  • 1/4 tsp. grated nutmeg
  • 4 cups half-and-half
  • 3 large sweet potatoes, peeled and thinly sliced (about 3 lbs.)
  • 1 medium apple, cored, peeled and thinly sliced
  • 1 cup shredded Gruyre or Swiss (4 oz.)

  1. Preheat oven to 375°F. Coat a 13x9-inch baking dish with nonstick cooking spray; set aside. In a large saucepan melt 1 tablespoon of the butter over medium heat. Add bacon; cook and stir 2 minutes or just until lightly browned. Add onion; cook and stir 2 minutes or until tender. Add remaining 5 tablespoons butter; cook and stir until melted.
  2. Reserve 2 tablespoons of the flour. For the sauce, stir remaining flour, lemon pepper, salt and nutmeg into saucepan. Whisk in half-and-half; cook and stir until thick and bubbly. Remove saucepan from heat.
  3. In a large bowl combine reserved 2 tablespoons flour with potatoes; toss to coat lightly. Pour one-third of the sauce into baking dish. Top with one-third of the potatoes, then one-third of the apple slices. Repeat layers twice more. Cover baking dish with foil.
  4. Place baking dish in oven. Bake 30 minutes. Reduce oven to 350°F. Remove foil; sprinkle the top with cheese. Bake, uncovered, 30 to 40 minutes or until potatoes are tender. Serve hot.
