Ingredients

  • 3 large sweet potatoes (about 1 1/2 lbs.), peeled, cut into 2-inch slices
  • 2 tbsp. olive oil
  • 1/4 cup light sour cream
  • 1/4 cup lowfat plain yogurt
  • 2 tsp. maple syrup
  • 1/4 tsp. ground cinnamon

  1. Preheat oven to 425°F. Line a baking sheet with foil and coat with nonstick cooking spray. In a large bowl or large resealable plastic bag combine sweet potatoes, oil, and salt and pepper to taste; toss to coat. Place in a single layer on baking sheet.
  2. Bake 20 minutes, stirring after 10 minutes of baking. Increase heat to 450°F and bake 10 minutes more.
  3. Meanwhile, for dip, in a small bowl combine sour cream, yogurt, maple syrup and cinnamon. Serve fries with dip.
