Ingredients

  • 1/2 (14.5-oz.) can diced tomatoes with green bell pepper and onion
  • 1 (8-oz.) can tomato sauce
  • 1/4 cup white vinegar
  • 1/4 cup brown sugar
  • 1 tsp. yellow mustard
  • 1/2 cup finely chopped onion
  • 1 egg, lightly beaten
  • 1/4 cup dried breadcrumbs
  • 2 lbs. lean ground beef

  1. Preheat oven to 400°F. In a medium bowl combine tomatoes, tomato sauce, vinegar, brown sugar and mustard. Set aside.
  2. In a large bowl combine onion, egg, breadcrumbs, 1 cup of the tomato mixture, and salt and pepper to taste. Add ground beef; mix well. In a shallow baking dish shape mixture into a 9x5x2-inch loaf.
  3. Bake meatloaf 45 minutes. Drain fat. Spoon 1/2 cup of the remaining tomato mixture over the meatloaf. Bake 15 to 30 minutes more or until an instant-read thermometer registers 160°F. Let stand 5 minutes. Serve warm with remaining tomato sauce.
