Stuffed Balsamic-Roasted Chicken Breasts

Ingredients

  • 2 (6- to 8-oz.) boneless, skinless chicken breasts
  • 4 thin slices prosciutto
  • 1 (8-oz.) pkg. fresh mozzarella
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried basil
  • 4 tbsp. balsamic vinaigrette salad dressing

  1. Preheat oven to 325°F. Coat a 4x8-inch glass or metal baking dish with nonstick cooking spray.
  2. Cut each chicken breast in half lengthwise so that each piece is approximately 1â?2-inch thick, making 4 breasts. Place each piece between 2 sheets of waxed paper. Using a meat mallet, pound until piece is about 1â?4-inch thick; set aside.
  3. Place 1 slice of prosciutto on each piece of chicken. Slice fresh mozzarella into 8 thin slices and place 2 slices on top of prosciutto. Sprinkle evenly with garlic powder and basil.
  4. Roll each piece of chicken jelly-roll style and place seam side down in baking dish. Drizzle chicken evenly with vinaigrette. Bake about 30 minutes or until an instant-read thermometer registers 165°F and cheese is bubbling. Let cool 5 minutes, and serve.
