Shrimp and Angel Hair Pasta

Ingredients

  • 1 lb. medium shrimp, peeled and deveined
  • 1/2 cup bottled Italian salad dressing
  • 8 oz. angel hair pasta
  • 3 tbsp. olive oil
  • 3 tbsp. butter
  • 6 green onions, thinly sliced
  • 4 cloves garlic, minced (about 4 tsp.)
  • 1 tbsp. Italian seasoning
  • 1 tbsp. dried parsley
  • 2 large tomatoes, finely chopped

  1. In a medium bowl combine shrimp and salad dressing; toss to coat. Cover and refrigerate up to 30 minutes.
  2. Meanwhile, cook pasta al dente according to package directions; drain and keep warm.
  3. In a large deep skillet heat oil and butter over medium-high heat. Add green onions, garlic and parsley; cook and stir 2 minutes. Add shrimp and marinade. Cook and stir just until shrimp are opaque. Stir in tomatoes, Italian seasoning, and salt and pepper to taste. Add cooked pasta to skillet; toss gently to combine. Cook just until heated through. Serve warm.
