Ingredients

  • 1 1/2 cups extra long grain rice
  • 1 medium onion, chopped
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1 tbsp. vegetable oil
  • 1 (10-oz.) pkg. small pork sausage links, cut into bite-size peices
  • 2 tbsp. less-sodium soy sauce

  1. Prepare rice according to package directions. Keep covered; set aside.
  2. Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and bell peppers; cook 5 minutes or until peppers are crisp-tender. Add sausage; cook and stir 5 minutes more or until sausage is cooked through. Drain fat.
  3. Stir in cooked rice and soy sauce. Season to taste with black pepper. Serve warm.
