Ingredients

  • 1 (2-1/2 lb.) eye round roast
  • 1 large garlic clove, halved
  • 2 tbsp. dried oregano
  • 2 tbsp. dried basil
  • 1 tsp. black pepper
  • 1 (6-oz.) can tomato paste
  • 1/4 tsp. garlic powder
  • 1/8 tsp. crushed red pepper flakes
  • 1 cup dry red wine or reduced-sodium beef broth
  • 1/3 cup balsamic vinegar

  1. Rub entire roast with garlic. Combine oregano, basil and pepper; press into the roast.
  2. In a shallow baking dish, combine tomato paste, garlic powder and red pepper flakes. Stir in wine and vinegar. Cover and refrigerate 10 to 24 hours, turning occasionally.
  3. Preheat oven to 350°F. Remove beef from marinade. Wrap beef in foil with 1/2 cup of the marinade. Roast 2 hours or until instant-read thermometer registers 150°F for medium-rare or 160°F for medium. Let stand 10 minutes before cutting into thin slices.
