Ingredients

  • 1 tbsp. butter or margarine
  • 2 cloves garlic, minced
  • 1 tbsp. extra virgin olive oil
  • 1 7-inch French baguette, cut into 24 slices (about 1/4-inch thick)
  • 1/3 cup light peppercorn-Parmesan spreadable cheese*
  • 2 medium Roma tomatoes, cut into 24 very thin slicesâ?
  • 1/4 lb. shaved roast beef, divided
  • 1 tbsp. shredded Parmesan or finely chopped parsley (optional)

  1. Preheat oven to 375°F. Combine butter and garlic in a small microwave-safe bowl. Microwave on HIGH 12 to 20 seconds or until butter melts. Stir in olive oil.
  2. Place baguette slices on broiler pan, or directly on oven rack to crisp both sides; brush tops with butter mixture. Bake 7 to 9 minutes or until lightly crisped. Do not overbake. Remove and let cool.
  3. To assemble the crostini, spread 1 toast lightly with 1 teaspoon cheese, top with 1 tomato slice, and "pile" a portion of the shaved beef on the tomato. Repeat with remaining 23 toasts. Sprinkle lightly with Parmesan or parsley, if desired, and serve.
