Ingredients

  • 6 to 8 (6-oz.) boneless pork chops, 3/4-inch thick
  • 1/4 tsp. dried sage
  • 5 tbsp. vegetable oil
  • 1 medium onion, coarsely chopped
  • 1/3 cup flour
  • 1/4 cup molasses
  • 1 cup golden raisins
  • 2 tbsp. white vinegar
  • 3 medium apples, cored and sliced
  • 1 (20-oz.) pkg. frozen herb-roasted potatoes

  1. Preheat oven to 350°F. Sprinkle both sides of chops with sage plus salt and pepper to taste. In a large skillet heat oil over medium-high heat. Add chops; cook just until browned on both sides. Transfer chops to a rectangular 3-quart baking dish, reserving drippings in pan.
  2. Add onion to drippings; cook and stir until lightly browned. Remove onions and set aside. Stir flour into drippings in pan. Add molasses and 4 cups water; bring to boiling. Cook and stir 1 minute more. Remove from heat; stir in raisins and vinegar.
  3. Place apples and onions on chops in baking dish; spoon molasses mixture on top. Bake, uncovered, 30 minutes. Remove baking dish from oven. Place potatoes around chops; stir to coat with pan juices.
  4. Bake 30 minutes more or until pork and potatoes are tender. Let stand 5 minutes before serving.
