Ingredients

  • 1 tbsp. vegetable oil
  • 4 cups cold cooked brown rice
  • 1 medium red bell pepper, seeded, cut into thin strips
  • 1 medium yellow or green bell pepper, seeded, cut into thin strips
  • 1/2 cup diagonally sliced green onions
  • 1/2 lb. deli peppered roast beef, sliced 1/4-inch thick
  • 1/4 cup teriyaki marinade
  • Lettuce leaves (optional)

  1. Heat oil in a large nonstick skillet over medium heat. Add rice; cook, stirring, until rice is golden. Add bell pepper strips and green onions; cook, stirring occasionally, 3 minutes or until peppers are crisp-tender.
  2. Meanwhile, roll up roast beef slices; cut across roll into slices 3/4-inch thick. Add beef and marinade to rice mixture in skillet. Cook, stirring occasionally, just until heated through.
  3. Wrap in lettuce leaves, if desired, and serve.
