Ingredients

  • 10 fresh peaches, halved, pitted, and sliced over a bowl to catch juices
  • 1/2 cup butter, melted
  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • 2 tbsp. sugar
  • 1 tsp. ground cinnamon
  • 1 (8-oz.) container frozen whipped topping, thawed
  • 1/2 cup finely chopped pecans
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground allspice

  1. Preheat oven to 350°F. Drain peach slices; reserve juice. Place butter in a rectangular 2-quart baking dish. Arrange peach slices in butter.
  2. Measure reserved juice. If needed, add enough water to make 1 1/2 cups. For batter, in a large bowl whisk together reserved juice, flour, 1 cup sugar, pecans and vanilla. Pour over peaches. Do not stir.
  3. In a small bowl stir together 2 tablespoons sugar, cinnamon, nutmeg and allspice. Sprinkle on batter. Bake 30 to 40 minutes or until golden brown around the edges and bubbly. Serve warm with whipped topping.
