Ingredients

  • 1 tbsp. vegetable or olive oil
  • 1 large sweet onion (such as Vidalia), thinly sliced
  • 2 tsp. sugar
  • 1 lb. fresh green beans, trimmed
  • 1/4 cup orange marmalade
  • 1 tbsp. light soy sauce

  1. Heat oil in a large nonstick skillet over medium heat. Add onion and sugar; cook, stirring, 25 to 30 minutes or until onions are deep golden brown. Remove skillet from heat.
  2. Meanwhile, cook green beans in boiling water 4 to 5 minutes or just until crisp-tender; drain. Plunge into ice water; drain.
  3. Add cooked green beans to skillet with onion. Stir in marmalade and soy sauce. Place skillet over medium-high heat; cook 2 to 3 minutes or until marmalade melts and mixture is heated through. Serve warm.
