Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup orange juice
  • 2 tbsp. plus 1 tsp. butter, divided
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground allspice
  • 1 tbsp. molasses or brown sugar

  1. Preheat oven to 400°F. Bake sweet potatoes 45 to 55 minutes or until tender. Cut potatoes in half and scoop out the pulp into a mixing bowl. Add orange juice, nutmeg, allspice and 2 tablespoons of the butter; beat until fluffy. Season with salt and pepper to taste.
  2. Lightly coat a 1-quart baking dish with nonstick cooking spray. Spoon potatoes into dish. Drizzle molasses over potatoes and dot with remaining 1 teaspoon butter.
  3. Bake, uncovered, 15 to 20 minutes or until heated through. Serve hot.
