Ingredients

  • 4 slices frozen garlic Texas toast
  • 4 tilapia fillets
  • 1/2 cup tequila-lime marinade
  • 1 cup baby spinach
  • 4 large tomato slices
  • 1 avocado, pitted, peeled and sliced

  1. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Place garlic bread on outer edges of grill; grill until lightly toasted, about 4 minutes per side.
  2. Coat fillets with tequila-lime marinade; discard marinade. Place fillets on grill. Grill, uncovered, 3 minutes per side or until fish flakes easily with a fork.
  3. To serve, top each bread slice with spinach, tomato, avocado and 1 fillet. Season with pepper to taste, drizzle with fresh marinade (if desired), and serve.
