Ingredients

  • 1 tbsp. olive oil
  • 1 small red onion, diced
  • 1/2 red bell pepper, seeded and diced
  • 1 jalapeño pepper, seeded and minced*
  • 1 cup frozen corn kernels, or kernels cut from 2 ears fresh corn
  • 2 cups cooked whole grains (such as barley, quinoa and brown rice)
  • 1/2 cup shredded cooked chicken
  • 1/2 cup canned black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

  1. Heat oil in a large nonstick skillet over medium heat. Add onion, bell pepper, jalapeño and corn. Cook and stir 3 to 5 minutes or until vegetables are tender.
  2. Stir in cooked grains, chicken and beans; cook 2 minutes. Stir in cilantro and lime juice, and serve.
