Ingredients

  • 2 (14.5-oz.) cans French-style green beans, drained
  • 1/2 cup chopped red bell pepper (optional)
  • 3 tbsp. chopped fresh mint
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, thinly sliced

  1. In a medium bowl combine bean and mint. If desired, add bell pepper. Set aside.
  2. In a small bowl whisk together olive oil, vinegar, and garlic. Pour over bean mixture; toss to coat. Season with salt and pepper to taste. Cover and refrigerate at least 2 hours. Toss once more before serving.
