Ingredients

  • 3 medium apples, cored, peeled (if desired) and sliced
  • 1/2 tsp. freshly grated orange peel (optional)
  • 1 tbsp. natural or sugar-free maple syrup
  • 1 tsp. butter
  • 1/2 cup reduced-sugar or sugar-free nonfat vanilla yogurt
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg

  1. Place apple slices and (if desired) orange peel in a 1-quart microwave-safe baking dish. Drizzle with maple syrup; toss to mix. Dot with butter; cover loosely. Microwave on HIGH 3 to 5 minutes or until apples are crisp-tender, stirring once.
  2. Meanwhile, for sauce, in a small bowl combine yogurt, cinnamon and nutmeg. To serve (either hot or at room temperature), spoon apples into individual dishes and drizzle with sauce.
