Ingredients

  • 1/4 cup frozen orange juice concentrate, thawed
  • 2 tbsp. honey
  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 1/2 tsp. ground cumin
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. cayenne or ground red pepper
  • Pinch ground cloves
  • 1 can peach halves, drained, cut into quarters
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 2 1/2 cups hot cooked brown rice

  1. Preheat grill to medium direct heat (300°F to 350°F). Meanwhile, for glaze, stir together orange juice concentrate and honey; set aside.
  2. Place chicken in a resealable plastic bag. In a small bowl stir together cumin, cinnamon, salt, garlic, cayenne and ground cloves. Add to chicken; seal bag, tossing to coat.
  3. Alternately thread chicken, peaches and bell pepper onto 10 long skewers.* Grill, uncovered, 5 to 7 minutes per side or until chicken is no longer pink, brushing with glaze during last 5 minutes of grilling. Serve with hot cooked rice.
