Ingredients

  • 7 cups shredded napa cabbage
  • 2 cups chopped, cooked chicken or turkey
  • 2 cups chopped walnuts
  • 2 cups grape tomatoes, halved
  • 1 can mandarin oranges, drained
  • 1/2 cup golden raisins
  • 1/2 cup rice vinegar
  • 1/4 cup low-fat mayonnaise
  • 2 tsp. sugar
  • 1 can chow mein noodles

  1. In a large salad bowl toss together cabbage, chicken, walnuts, tomatoes, oranges and raisins.
  2. For dressing, in a small bowl whisk together vinegar, mayonnaise and sugar. Season to taste with salt and pepper.
  3. Drizzle dressing over salad; toss to coat. Sprinkle with chow mein noodles just before serving.
