Ingredients

  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tbsp. honey
  • 1/4 tsp. cayenne
  • 4 boneless, skinless chicken breasts
  • 1 ripe avocado, pitted, peeled and sliced
  • 1 cup grape tomatoes or quartered cherry tomatoes
  • 1/2 cup peeled, seeded and chopped cucumber
  • 1/4 cup chopped fresh basil

  1. For the marinade, in a small bowl, whisk together lime juice, oil, honey, cayenne and salt to taste. Place chicken in a resealable plastic bag. Pour half the marinade over chicken; reserve the remainder. Seal bag; refrigerate 1 hour.
  2. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Remove chicken from marinade; discard marinade. Place chicken on grill. Grill, covered, 8 to 10 minutes on each side or until no longer pink (165°F).
  3. Chop chicken into chunks. Transfer to a large bowl. Add avocado, tomatoes, cucumber and basil and reserved marinade. Toss gently, and serve.
