Ingredients

  • 1/2 cup fresh lemon juice
  • 1 tbsp. olive oil
  • 2 garlic cloves, minced
  • 2 tbsp. chopped fresh mint
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1/2 pkg. portobello mushrooms, sliced
  • 1/2 red bell pepper, seeded, cut into 1-inch pieces
  • 1/2 red onion, cut into 1-inch pieces
  • 1/2 lb. skinless, boneless chicken breasts, cut into 1-inch pieces

  1. For the marinade, in a small bowl whisk together lemon juice, oil, garlic, mint, salt and pepper. Set aside.
  2. Alternately thread mushrooms, red bell pepper, onion and chicken on 2 long or 4 short skewers.? Place skewers in a shallow glass baking dish. Pour marinade over skewers; cover and refrigerate 30 minutes.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Grill skewers, covered, 5 to 7 minutes per side or until chicken is no longer pink (165°F). Serve hot or warm.
