- For the marinade, in a small bowl whisk together lemon juice, oil, garlic, mint, salt and pepper. Set aside.
- Alternately thread mushrooms, red bell pepper, onion and chicken on 2 long or 4 short skewers.? Place skewers in a shallow glass baking dish. Pour marinade over skewers; cover and refrigerate 30 minutes.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Grill skewers, covered, 5 to 7 minutes per side or until chicken is no longer pink (165°F). Serve hot or warm.
