Ingredients

  • 1/3 cup vegetable juice cocktail or tomato juice
  • 3/4 cup seasoned dry breadcrumbs
  • 2 tsp. Worcestershire sauce
  • 1 egg
  • 1 tsp. garlic pepper
  • 1 lb. ground beef chuck or ground turkey
  • 1 small onion, finely chopped
  • Additional vegetable juice cocktail or tomato juice (optional)

  1. Preheat oven to 350°F. Coat an 8x4-inch loaf pan with nonstick cooking spray. In a medium bowl combine juice, breadcrumbs, Worcestershire, egg, garlic pepper, and salt and pepper to taste. Add beef and onion; combine thoroughly. Press meat mixture firmly into loaf pan.
  2. Bake 1 hour or until top is lightly browned and instant-read thermometer registers 170°F. Drizzle with additional 2 tablespoons juice during last 10 to 15 minutes, if desired. Let stand 5 minutes before slicing.
