Ingredients

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced (3 tsp.)
  • 1 (14.5-oz.) can stewed tomatoes with onions, celery and green peppers
  • 1 (8-oz.) can tomato sauce
  • 1 (6-oz.) can tomato paste
  • 3 tbsp. cider vinegar
  • 4 tsp. chili powder
  • 1 tbsp. ground cumin
  • 1 tsp. seasoned pepper blend
  • 3 to 4 (15-oz.) cans chili beans
  • 1 (4-oz.) can mushroom stems and pieces, drained
  • Shredded Cheddar and sour cream for serving (optional)

  1. In a 4-quart Dutch oven cook ground beef, onion and garlic over medium-high heat until meat is browned. Drain fat. Stir in tomatoes, tomato sauce, tomato paste, vinegar, chili powder, cumin and seasoned pepper blend. Bring to boiling; reduce heat. Simmer, uncovered, 15 minutes.
  2. Stir in beans to taste and mushrooms. Return to boiling; reduce heat. Cover and simmer 30 minutes more, stirring occasionally. Season with salt and pepper to taste. Ladle chili into bowls. If desired, serve with cheese and sour cream.
