Ingredients

  • 1 1/2 lbs. halibut fillets, cut into 1-inch cubes
  • 8 pancetta slices, cut into 1-inch strips
  • 1 pt. cherry tomatoes
  • 1 tbsp. olive oil
  • 2 fresh rosemary sprigs, leaves removed and finely chopped
  • 3 garlic cloves, minced

  1. Preheat oven to 350°F. Line a baking sheet with foil, and coat foil with nonstick cooking spray. Season fish with salt and pepper to taste. Wrap 1 strip of pancetta around each cube.
  2. Alternately thread fish and tomatoes onto 4 skewers, leaving a little space between tomatoes and fish. Place skewers on baking sheet. Drizzle with oil, and sprinkle with rosemary and garlic.
  3. Cover baking sheet with foil and place in oven. Bake 20 minutes or until fish is opaque. Remove from oven, and serve.
