Ingredients

  • 2 tbsp. chopped fresh parsley
  • 2 tbsp. chopped fresh thyme
  • 2 garlic cloves, minced
  • 1/2 cup fresh lemon juice
  • 2 tbsp. olive oil
  • 1 tsp. Dijon mustard
  • 3/4 lb. large shrimp, peeled and deveined (about 20 to 26 shrimp)
  • 1 cup imitation crabmeat*
  • 4 cups mixed salad greens
  • 1 cup shredded carrots
  • 1 small cucumber, thinly sliced
  • 1/2 yellow bell pepper, seeded, cut into strips
  • 1/2 red bell pepper, seeded, cut into strips

  1. Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). For the dressing, in a small bowl combine parsley, thyme, garlic, lemon juice, oil, mustard, and freshly ground black pepper to taste. Set aside.
  2. Place shrimp and crabmeat on grill. Grill, covered, 3 to 5 minutes per side or until shrimp turn pink and crabmeat is lightly browned. Remove from grill; chop crabmeat.
  3. Place salad greens in a large serving bowl. Add shrimp, crab, carrots, cucumber and bell peppers. Drizzle with dressing, and serve.
