Ingredients

  • 1/4 cup Dijon-style mustard
  • 1 tbsp. brown sugar
  • 1 tbsp. honey
  • 1 tsp. peeled, grated gingerroot or 1/2 tsp. ground ginger
  • 4 (5- to 6-oz.) boneless, skinless chicken breasts
  • 1 (7-oz.) bag mixed greens
  • 2 small ripe peaches or nectarines, pitted and sliced
  • 1/4 cup thinly sliced red onion
  • 1/2 cup light vinaigrette

  1. Stir together mustard, brown sugar, honey and ginger in small bowl.
  2. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Place chicken on grill; brush chicken with half of mustard mixture. Grill, covered, 5 to 7 minutes per side, brushing with remaining mustard mixture, until tender and no longer pink (165°F).
  3. Meanwhile, arrange salad greens on 4 salad plates. Top with peach and red onion slices. Drizzle each salad with 2 tablespoons vinaigrette. Place chicken breast on top.
