- Preheat grill to medium (300Â°F to 350Â°F). Coat grill rack with nonstick cooking spray. For dressing, in a medium bowl combine mayonnaise, vinegar, tarragon, 1/2 teaspoon of the brown sugar, and salt and pepper to taste. Cover and chill until needed.
- In a small bowl combine garlic pepper and remaining 2 teaspoons brown sugar. Rub evenly on chicken.
- Place chicken on grill. Grill, covered, 8 to 12 minutes, turning once, or until chicken is cooked through and juices run clear (165Â°F). Remove from grill and let cool slightly.
- Coarsely chop or shred chicken; transfer to a large bowl. Add melon, green onion and chilled dressing; toss lightly. Serve immediately, or cover and refrigerate. Stir in pecans just before serving.
