Ingredients

  • 1 loaf Italian bread, cut into 1-inch slices
  • 3 tbsp. olive oil, divided
  • 1 cup cherry tomatoes, quartered
  • 1 small yellow bell pepper, seeded and chopped
  • 2 tbsp. chopped fresh basil
  • 1 garlic clove, minced
  • 3 tbsp. grated Parmesan cheese

  1. Preheat grill to medium-low (275°F to 300°F). Brush bread slices with 2 tablespoons of the olive oil. Lightly toast both sides of bread slices about 2 minutes per side.
  2. Combine tomatoes, bell pepper, remaining 1 tablespoon olive oil, basil and garlic.
  3. Spoon tomato mixture onto toast, sprinkle with cheese, and serve.
