Ingredients

  • 1/4 cup vegetable oil
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 1/4 cups brown rice flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 cup raisins, rehydrated?
  • 1/2 cup milk
  • 1/4 cup applesauce
  • 1/2 cup finely chopped pecans

  1. Preheat oven to 350°F. Coat a 9x5x3-inch bread pan with nonstick cooking spray. For the batter, in a medium bowl and using a wooden spoon, stir together oil and sugar. Stir in egg.
  2. Add flour, baking soda, baking powder and cinnamon. Stir to incorporate (do not overmix). Stir in raisins, milk, applesauce and pecans.
  3. Pour batter into bread pan. Bake 35 to 40 minutes. Let cool in pan. Remove bread from pan, slice and serve.
