Ingredients

  • 1 lb. skinless, boneless chicken breasts, cut into bite-size pieces
  • 1 medium onion, chopped
  • 1 tbsp. peeled, grated gingerroot
  • 1 tbsp. olive oil
  • 1/4 cup teriyaki sauce
  • 2 tbsp. light soy sauce
  • 2 cups part-skim mozzarella (8 oz.)
  • 6 hoagie rolls, split
  • Mayonnaise or honey mustard (optional)
  • 2 cups shredded lettuce or lettuce leaves
  • 1 large tomato, sliced

  1. In a large skillet heat oil over medium heat. Add chicken, onion and ginger; cook, sitrring, until chicken is no longer pink and onion is tender. Stir in teriyaki sauce and soy sauce; heat through. Stir in cheese; cook and stir until cheese melts. Remove from heat. Let stand, covered, 5 minutes.
  2. Spread rolls with mayonnaise or honey mustard, if desired. Place lettuce on the bottom half of each roll. Spoon chicken mixture on lettuce, top with sliced tomato, and cover with top half of roll. Serve warm.
