Ingredients

  • 1 1/2 cups sliced mushrooms
  • 2 tbsp. olive oil
  • 1 cup chopped onion
  • 1 large garlic clove, minced
  • 4 cups diced fresh plum tomatoes (about 10 medium)
  • 1/4 tsp. dried Italian seasoning
  • 1 pkg. penne pasta
  • 1/2 cup shredded Parmesan-Romano cheese blend
  • 1/4 cup chopped fresh Italian parsley

  1. Heat oil in a 12-inch sauté pan over medium heat. Add mushrooms; cook, stirring, to brown. Add onion and garlic; cook until onion is tender. Add tomatoes and Italian seasoning; bring to boiling. Reduce heat and simmer 8 minutes, stirring occasionally. Season to taste with salt and pepper.
  2. Meanwhile, cook pasta al dente according to package directions; drain. Pour into a serving bowl. Spoon sauce over pasta; toss lightly. Top with cheese and parsley, and serve.
