- Heat oil in a 12-inch sautÃ© pan over medium heat. Add mushrooms; cook, stirring, to brown. Add onion and garlic; cook until onion is tender. Add tomatoes and Italian seasoning; bring to boiling. Reduce heat and simmer 8 minutes, stirring occasionally. Season to taste with salt and pepper.
- Meanwhile, cook pasta al dente according to package directions; drain. Pour into a serving bowl. Spoon sauce over pasta; toss lightly. Top with cheese and parsley, and serve.
