Ingredients

  • 3 cups fresh strawberries, hulled
  • 1 (9-inch ) ready-to-fill baked pie shell
  • 1 (3-oz.) pkg. strawberry gelatin
  • 3 tbsp. cornstarch
  • 1 (8-oz.) pkg. cream cheese, softened
  • 1 cup sifted powdered sugar
  • 1/2 (8-oz.) pkg. frozen whipped topping, thawed

  1. Place strawberries in pie shell. Set aside.
  2. In a small bowl combine gelatin and cornstarch. Stir in 1 cup boiling water until gelatin dissolves. Let stand to cool 10 minutes. Pour gelatin mixture over strawberries in pie shell.
  3. In a small mixing bowl beat together cream cheese and powdered sugar with an electric mixer on medium speed until fluffy. Fold in whipped topping. Spread cream cheese mixture over top of pie. Cover and refrigerate 3 to 4 hours or until set. Cut pie into wedges, and serve.
