Ingredients

  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 tbsp. olive oil
  • 1 lb. lean ground beef
  • 2 (8-oz.) cans tomato sauce
  • 1 cup arborio rice
  • 2 (14-oz.) cans low-sodium chicken broth, divided
  • 1/2 tsp. dried basil
  • 1/2 cup grated Parmesan
  • 1/2 tsp. dried oregano

  1. In large heavy saucepan cook onion and garlic in hot oil until onion is tender. Remove from pan. In same saucepan cook ground beef until beef is brown. Drain fat. Add tomato sauce and cook for 10 minutes.
  2. Add rice and 1 can of the chicken broth to beef mixture. Cook and stir over medium-low heat until mixture thickens. Slowly add 1/2 cup of the remaining chicken broth. Continue to cook and stir until liquid is absorbed. Repeat adding 1/2 cup broth at a time to mixture and cooking and stirring until liquid is absorbed. (This process should take about 30 minutes total.)
  3. Remove rice mixture from heat; stir in cheese, and season with salt and pepper to taste. Let stand 5 minutes before serving.
