Ingredients

  • 1 cup whole flaxseed
  • 1/2 cup whole-wheat panko breadcrumbs
  • 1 lb. salmon fillets
  • 1/2 tsp. sea salt, divided
  • 1/4 tsp. lemon pepper
  • 3 tbsp. fresh lemon juice
  • 4 cups broccoli florets
  • 1/4 tsp. freshly ground pepper
  • 1 tbsp. olive oil

  1. Preheat oven to 425°F. In a small bowl combine flaxseed and panko; set aside.
  2. Place fillets in a large baking dish. Sprinkle with salt and lemon pepper; drizzle with lemon juice. Sprinkle tops of fillets with flaxseed mixture, pressing to coat. Bake 15 minutes or until fish flakes easily with a fork.
  3. Meanwhile, for the broccoli, line a baking sheet with foil. Place broccoli on baking sheet; sprinkle with salt and pepper. Drizzle with oil; toss to coat. Bake 8 minutes or until tender. Serve salmon with roasted broccoli.
