Ingredients

  • 1 fennel bulb, halved
  • 2 tbsp. olive oil, divided
  • 6 plum or Roma tomatoes, diced
  • 12 Greek olives, pitted and sliced
  • 2 garlic cloves, minced
  • 1/4 cup dry white wine or vegetable broth
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 4 anchovies packed in oil, chopped (optional)
  • 8 oz. linguine, cooked
  • 1/4 cup fresh chopped parsley (optional)
  • 2 tbsp. grated Parmesan cheese (optional)

  1. Preheat grill to medium-high (350°F to 400°F). Brush fennel with 1/2 teaspoon of the oil. Grill, covered, 4 minutes per side or until tender and browned. Slice fennel; place in an aluminum foil pack.
  2. Add tomatoes, olives, garlic, wine, remaining oil, salt, pepper and (if desired) anchovies to foil pack. Fold foil to seal. Place on grill; grill 12 minutes.
  3. Serve over hot linguine. Sprinkle with parsley and Parmesan, if desired.
