- Preheat grill to medium-high (350°F to 400°F). Brush fennel with 1/2 teaspoon of the oil. Grill, covered, 4 minutes per side or until tender and browned. Slice fennel; place in an aluminum foil pack.
- Add tomatoes, olives, garlic, wine, remaining oil, salt, pepper and (if desired) anchovies to foil pack. Fold foil to seal. Place on grill; grill 12 minutes.
- Serve over hot linguine. Sprinkle with parsley and Parmesan, if desired.
