Ingredients

  • 1 (6-oz.) pkg. fresh spinach or arugula
  • 1 (15-oz.) can mandarin oranges, undrained
  • 1 pint fresh strawberries, hulled and halved
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tbsp. chopped fresh basil
  • 1/4 cup pine nuts, toasted
  • 1/4 cup crumbled goat cheese (1 oz.) (optional)

  1. Place spinach in a large salad bowl. Drain oranges, reserving juice. Add oranges and strawberries to spinach; set aside.
  2. For the dressing, pour 1/3 cup of the reserved juice into a small bowl. Add balsamic and red wine vinegars. Gradually whisk in oil. Stir in garlic and basil; season to taste with salt and freshly ground pepper.
  3. Drizzle dressing over salad; toss. Sprinkle with pine nuts and (if desired) goat cheese, and serve.
