Ingredients

  • 2 bags boil-in-bag white rice
  • 1 lb. lean ground beef
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1 (15-oz.) can kidney beans, drained
  • 1 (14.5-oz.) can diced tomatoes, undrained
  • 1 (1.25-oz.) pkg. chili seasoning
  • 1 1/2 cups shredded Cheddar

  1. Preheat oven to 350°F. Cook rice according to package directions. Keep covered; set aside.
  2. Meanwhile, in a large deep skillet cook and stir beef, bell pepper and onion over medium-high heat until beef is browned and vegetables are tender. Drain fat.
  3. In a large bowl combine cooked rice, beef mixture, beans, tomatoes, chili seasoning, and salt and pepper to taste. Transfer to a rectangular 3-quart baking dish. Cover with foil.
  4. Bake 30 minutes. Remove from oven; sprinkle with cheese. Bake, uncovered, 20 to 30 minutes more or until bubbly. Let stand 5 minutes before serving.
