- Preheat oven to 350°F. Lightly coat a rectangular baking dish with nonstick cooking spray; set aside. Cook rice according to package directions. Keep covered; set aside.
- Meanwhile, in a large skillet cook beef and onion over medium-high heat until beef is browned and onion is tender; drain fat. Add taco seasoning, enchilada sauce and salsa; stir until combined.
- Line bottom of prepared baking dish with 3 tortillas. Layer with one-third each of the beef mixture, cooked rice and cheese. Repeat each layer twice more, ending with the cheese. Bake, uncovered, 30 minutes or until bubbly. Let stand 5 minutes. If desired, serve with sour cream.
