Ingredients

  • 1 (5-oz.) pkg. yellow rice mix
  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 (1.25-oz.) pkg. taco seasoning
  • 1 (10-oz.) can red enchilada sauce
  • 1 cup bottled salsa
  • 9 (8-inch) flour tortillas
  • 2 cups shredded Colby?Monterey Jack blend (8 oz.)
  • Sour cream for serving (optional)

  1. Preheat oven to 350°F. Lightly coat a rectangular baking dish with nonstick cooking spray; set aside. Cook rice according to package directions. Keep covered; set aside.
  2. Meanwhile, in a large skillet cook beef and onion over medium-high heat until beef is browned and onion is tender; drain fat. Add taco seasoning, enchilada sauce and salsa; stir until combined.
  3. Line bottom of prepared baking dish with 3 tortillas. Layer with one-third each of the beef mixture, cooked rice and cheese. Repeat each layer twice more, ending with the cheese. Bake, uncovered, 30 minutes or until bubbly. Let stand 5 minutes. If desired, serve with sour cream.
