Day After Turkey Day Pot Pie

  • 2 Tbsp. Butter
  • 1 Small Onion, Finely Chopped
  • 1/4 Cup Flour
  • 1 Cup Milk
  • 1 Cup Chicken Broth
  • 2 Cups Leftover Turkey (Shredded or Cut Up)
  • 1 Bag (14 oz) Birds Eye Classic Mixed Vegetables

  1. Preheat oven to 400°F
  2. Melt butter over medium heat in medium saucepan and cook onion, stirring occasionally, 5 minutes or until softened. Add flour and cook, stirring constantly 1 minute or until golden brown. Stir in milk and whisk until starting to thicken.
  3. Add turkey, Classic Mixed Vegetables, salt, black pepper and thyme.
  4. Turn into 10-inch cast iron skillet or 1-1/2-quart round casserole dish and cover with pie crust; pressing edges to secure. With knife cut several small slits into crust.
  5. Bake 25 minutes or until crust is golden brown and filling is bubbling.
