Ingredients

  • 2 tsp. brown sugar
  • 2 tsp. paprika (optional)
  • 1 tsp. garlic pepper
  • 1 tsp. ground cumin
  • 1 tsp. ground oregano
  • 1/2 tsp. onion salt
  • 1/4 tsp. ground thyme
  • 2 lbs. boneless beef top sirloin steak, 1 inch thick

  1. For the rub, in a small bowl stir together brown sugar, paprika, garlic pepper, cumin, oregano, onion salt and thyme. With a sharp knife make shallow diagonal slashes on both sides of steak. Rub both sides of steak evenly with rub. Place steak on a plate; cover and set aside.
  2. Preheat grill to medium direct heat (300°F to 350°F). Grill steak, covered, 5 to 8 minutes per side (145°F) or to desired doneness.
  3. Remove steak from grill; let stand 5 minutes. Cut into thin slices, and serve.
