Ingredients

  • 1 tbsp. packed brown sugar
  • 1 1/2 tsp. cumin seeds, crushed
  • 1 1/2 tsp. dried oregano
  • 1 tsp. ground cumin
  • 3/4 tsp. dried thyme
  • 2 garlic cloves, minced
  • 1/8 tsp. cayenne pepper
  • 2 (3/4-lb.) pork tenderloins, trimmed
  • 1 tbsp. olive oil
  • 3 poblano peppers, halved, cored and seeded*
  • 1 large red bell pepper, halved, cored and seeded
  • 3 onion slices 3/4-inch thick
  • 2 oz. queso fresco cheese, crumbled

  1. Preheat oven to 425°F. In a shallow dish combine brown sugar, cumin seeds, oregano, ground cumin, thyme, garlic, cayenne, and salt to taste. Cut pork diagonally into slices 3/4-inch thick. Coat slices with seasoning mixture, pressing lightly. Place seasoned pork on broiler pan rack.
  2. Place poblanos, bell peppers and onions in a bowl; add oil, and toss to coat. Place vegetables on broiler pan with pork. Roast 15 to 20 minutes or until an instant-read thermometer inserted into the pork registers 145°F. Let stand 3 minutes.
  3. Cut peppers into strips. Sprinkle pork and vegetables with cheese, and serve.
