- Put corned beef into large pot and cover with water. Add spice packet that comes with corned beef or 2-3 teaspoons of picking spice. Cover pot and bring to a boil, then reduce to a simmer. Simmer for approximately 45 minutes per pound or until tender.
- Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for an additional 15 minutes. Remove meat and let rest for 15 minutes.
- Place vegetables in a bowl and cover. Add broth as desired. Serve with meat sliced against the grain.
