Classic Chicken Parmesan

Ingredients

  • 1 cup Italian breadcrumbs
  • 1/3 cup flour
  • 2 eggs, beaten
  • 1/2 cup lowfat milk
  • 2 tsp. Italian seasoning
  • 3 tbsp. olive oil
  • 4 boneless, skinless chicken breasts
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 1 (24-oz.) jar tomato?basil pasta sauce
  • 1 cup shredded part-skim mozzarella
  • 1/2 cup chopped green bell pepper

  1. In a shallow bowl combine breadcrumbs and flour; set aside. In another shallow bowl whisk together eggs, milk and seasoning; set aside.
  2. In a large skillet heat oil over medium-high heat. Dip chicken in breadcrumb mixture, then in eggs. Repeat. Place chicken in skillet; cook 2 minutes per side or until golden. Drain on paper towels.
  3. In the same skillet sauté onion, bell pepper and garlic over medium-high heat until tender. Stir in pasta sauce. Return chicken to skillet; bring to boiling. Reduce heat; simmer, covered, 10 minutes or until chicken is no longer pink (165°F). Top each chicken breast with mozzarella; cook just until cheese melts. Serve hot.
