Ingredients

  • 1 lb. lean ground beef
  • 1 (16-oz.) can pinto beans, rinsed and drained
  • 1 (14.5-oz.) can diced tomatoes with onions, celery and green peppers, undrained
  • 1 (6-oz.) can tomato paste
  • 1 to 2 tsp. chili powder
  • 1 cup shredded reduced-fat sharp Cheddar
  • Tortilla chips for serving

  1. In a large saucepan cook ground beef over medium-high heat until browned. Drain fat. Stir in pinto beans, diced tomatoes and tomato paste. Add chili powder to taste. Bring to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally.
  2. Add cheese to beef mixture. Cook and stir until cheese is melted. Season with salt and pepper to taste. Serve warm with tortilla chips.
